From Garden to Jar - Freeze-Dried Instant Potatoes

Long-term food storage can be a hassle! Our typical method for storing food is canning; however, we recently purchased a medium-sized Harvest Right Freeze dryer. Join us as we learn tips and tricks and share them along with you!
1. Fairly simple, dig up the potatoes. We left the dirt on the potatoes until we were ready to get started making the mashed potatoes.
2. Wash potatoes and cut them into bite-sized cubes. Personally, we did not peel the potatoes. They are a little chunkier, but it’s all about preference!
3. Boil water, add potatoes, and let them cook for roughly 20-25 minutes. Make sure that the potatoes are fork-tender. If not done, they will be very hard to blend.
4. Make mashed potatoes using your preferred method. We added salt, milk and pepper.
5. Put your mashed potatoes on the tray and prep your freeze dryer. We ran ours for roughly 55 hours. Adding milk created more moisture and allowed for some extra dry time, just in case.
6. After the freeze dryer finished, we blended the freeze-dried potatoes, added them to a mason jar, and vacuum sealed!
